I have a question for the Moms out there, and I want you to answer honestly. Who among you has waited for HOURS until your child was absolutely, positively asleep before pulling out a sweet snack so that you wouldn’t have to share? Or, even better (or worse depending on what side of the fence you’re on), you eat all the sweets while the kids are at school, and when they come home and ask for a snack, you offer them an apple or grapes because, “We don’t eat all of that unhealthy stuff in this family!” Mmmhmm, y’all know what I’m talking about. I know I’m grown and I should be able to eat what I want when I want, but to do it in front of a 5-year-old? Oh.My. Gosh. “What’s that? Can I have some? Do you have more?” #icant
Those questions are the reason I have perfected the down low snack. Oh yeah, I’m totally the stealth snacker. During the day, while I’m working from home, I’m able to get my sweet on and leave no signs of it by the time Ayva gets home! I’ve been experimenting lately with mug cakes because not only are they quick to make, but they’re so small that I can eat the whole thing and there’s no evidence. Of course, even though I love my secret sweets, I don’t want to get too crazy with it. I recently added Sweet’N Low and cocoa powder to my go-to recipe, and it turned out perfectly! Since I knew I was saving on calories, I went on ahead and added a handful of chocolate chips, too. #yolo
Mug cakes are completely easy to make. Now, don’t expect to be able to replace your favorite bakery’s birthday cake with this bad boy because, well, it’s a cake made in the microwave. For a quick treat (or a secret snack), it serves its purpose well. It’s moist and sweet (add more Sweet’N Low if you like yours really, really sweet. I found about 2 tsp to be enough, though). I’m really having good time experimenting with replacing sugar in recipes with Sweet’N Low. Want more ideas on ways to use Sweet’N Low in your favorite recipe? Sweet’N Down Low Mug Cake
INGREDIENTS:
-1/4 cup flour
-1/4 tsp baking powder
-2 tbsp coconut oil
-dash of salt
-1/4 tsp. cocoa powder
-1 tbsp whiskey (you could use vanilla extract instead!)
-1/4 cup skim milk
-small handful of chocolate chips
-2 packets of Sweet’N Low (about 1 tsp per packet)
DIRECTIONS:
-Combine the dry ingredients really well in a bowl.
-Add the liquids and mix by hand with a spoon until really smooth
-Pour mixture in a mug (I actually used a ramekin for the perfect shape!)
-Microwave on high for 2 minutes.
-Eat while hot!
