There’s something magical about a vegetable recipe that makes your child eat straight from the pan with their fingers and that sends your man back to the kitchen for seconds. That’s what this Parmesan Green Bean recipe does. It is so good, y’all! Our family has a kind of love/hate relationship with veggies. I love just about anything green while Terrence and Ayva are a lot more particular. That means we eat a lot of broccoli, spinach and green beans, their greens of choice. I’ve eased them into kale, and hope to one day break down the brussel sprouts barrier. Until then, I’ll keep experimenting with our old standbys. Enter Parmesan Roasted Green Beans.

This recipe is so easy (as all of my recipes are) and so delicious. Ayva could not get enough, and even as I was putting away leftovers, I kept nibbling on them as well! Oh, and I have to let you in on a secret. I used frozen green beans. Yup, I just steamed those suckers in the microwave for a few minutes before I seasoned and roasted them. Good food doesn’t have to take long. If it did, my family would never eat. #impatientcook Ha!

Parmesan Roasted Green Beans

Ingredients
-1 package of frozen green beans (you could also use fresh)
-freshly grated Parmesan cheese
-cracked black pepper (to taste)
-sea salt (to taste)
-olive oil

Directions
Preheat oven to 400 degrees Fahrenheit. If you are using frozen green beans, steam them in the microwave before you begin. It’s not necessary to pre-steam if you are using fresh green beans. Once the green beans are done, drain any water and pour about 2 tablespoons of olive oil on the beans and shake the bowl to coat. Liberally season with cracked black pepper and salt.  Place the green beans on a baking sheet, making sure they are all flat and not on top of each other. Cover with freshly grated parmesan cheese. Bake for 15 – 20 minutes or until cheese is melted and brown.
