Pasta. Am I right? I don’t even have to explain what I mean because if you’re a carb-head like me, you already get it. Pasta,the ever versatile, ever delicious food that comes in different shapes and flavors, is truly a blessing in my life. Without it, there would have been many nights that my family might have gone hungry. Fortunately for them, though, pasta is the food that saves. It saves time, energy, and a sista’s sanity. I might not be a super chef, but I do know my way around a box of pasta. Yes, dry pasta. There is no shame in my game. One day I might switch to homemade, but for now I get my pasta from a box…and I like it.
The only thing about pasta is that Terrence isn’t as in love with it as I am, so I don’t make it as often as I would like. When I do make it, I want those meals to count because I know that we aren’t going to have pasta again for awhile. One of my favorite dishes to make is Baked Tortellini. It’s everything you’d want in a pasta dish. There’s pasta filled with cheese, covered in sauce and topped with more cheese. Seriously amazing. The best part about this Baked Tortellini is that it’s so easy to make that you don’t even need a recipe.
To make it, just prepare one 12 oz. bag of tortellini. I like Barilla’s dry pasta for this dish the best (they call it collezione). Once the pasta is done, drain it and then add it to a casserole dish. Top it with spinach, a 14 oz. jar of tomato sauce, cracked black pepper, oregano and cheese. Bake it on 425F for 25 minutes or until the cheese is melted and brown. That’s it.
The only other tip for making Baked Tortellini is to consider serving it with wine. After toiling in the kitchen for nearly 10 minutes, you totally deserve it.
