It’s been nearly 4 years since I moved to California from Philadelphia, and in that time I’ve gotten really spoiled when it comes to food. There’s something about knowing where your food comes from that makes it taste extra delicious. I think that’s why folks love to pick strawberries in the summer, or apples in the fall. The closer you can get to the source, the better. That’s especially true for me when it comes to meat and produce. Keeping my family and myself healthy is really important to me. I care about the quality of the food that we eat, and choose organic everything whenever I can. Of course Terrence and Ayva could not care less about whether or not their food is organic or not. As long as it tastes good and there’s enough for seconds, they’re happy!
They were definitely happy tonight when I made Foster Farms® Organic Chicken with homemade pesto. It was basically everything we love about California on a plate. The garlic, basil, and olive oil that I used to make the pesto were all from California. Not only that, Foster Farms is family-owned and was started near Modesto, California. Nope, you don’t have to go to a specialty store to get organic chicken anymore. My how things have changed, huh? Even though none of that means anything to my family, I feel good knowing that I’m serving them food that not only tastes good, but is good for them. I know many of you feel the same way, so I’m sharing my recipe for Chicken with Pesto. Enjoy!
Chicken and Homemade Pesto with Pasta
Ingredients
– 1 lb. Foster Farms® Organic Chicken Thin Sliced Breast Fillets, cut into small bite size
-1 cup basil
-1/2 cup olive oil
-1 clove garlic
-1 cup shaved parmesan
-1/4 cup pine nuts
-salt and pepper to taste
-1 package dry pasta
Directions
-Cut the Foster Farms® Organic Chicken Thin Sliced Breast Fillets into bite size pieces. Add a bit of olive oil to a pan and sauté until cooked through. Put to the side.
-Cook pasta according to package.
-Add basil, olive oil, garlic and pine nuts to a food processor and pulse until thoroughly mixed. Add parmesan cheese and pulse a tiny bit more. Add salt and pepper to taste. You MAY need to add a few more pine nuts or olive oil if it’s too garlicky for your taste.
-Mix the pesto with the chicken and serve over pasta.
