Being healthy doesn’t have to be hard. I mean, making huge changes can be challenging, but small tweaks here and there, that’s easy.
Every year I resolve to eat better and feed my family better, and I’m happy to report that so far we’ve been doing really good.
You don’t have to stop eating all of the things you love. Sometimes it’s just about moderation, and other times it’s about adding or deleting a particular ingredient to make your food better for you. That’s what I did with these easy Chocolate Chip Muffins.
The first thing I have to let you know about these Chocolate Chips Muffins is that anytime you bake with chocolate chips, it’s pretty much a given that whatever you’re making is going to taste good.
Second, adding low-fat yogurt adds protein to these little guys which make them perfect for a breakfast treat. You can eliminate oil and just use a bit of butter along with the yogurt.
If you don’t have yogurt, you can use the same amount of milk (1 cup) as you would yogurt in this recipe.
I adapted this recipe straight from the back of a yogurt container, and was really pleased with how they came out.
They are NOT very sweet at all which works for us. If you like a sweeter muffin, you may want to increase the sugar in this recipe.
Chocolate Chip Muffins made with Yogurt
Ingredients
-2 cups flour
-1/2 cup sugar
-1 1/2 tsp baking soda
-2 eggs
-1 cup lowfat vanilla yogurt
-1/4 cup melted butter
-2 tsp cinnamon
-1 tsp water
-1/2 cup chocolate chips
Directions
Preheat oven to 375 degrees F.
Prepare a 12 cup muffin tin with cups.
Mix all of the dry ingredients in one bowl (flour, baking soda, cinnamon, sugar).
Mix the eggs, butter, and yogurt in another bowl with a hand mixer, and then incorporate into the bowl with the dry ingredients.
Add the chocolate chips. Pour into the muffin cups and bake for about 20 minutes. Tastes GREAT warm.
