Even though Northern California is currently in a heatwave, the fact remains that fall is right around the corner. Usually by this time each year, regardless of what the weatherman says, I’m packing away my sandals and getting my boots ready to be reunited with my lightweight sweaters. More importantly, though, I’m letting go of summer flavors like watermelon and strawberry and preparing my palate for the taste of autumn. Apples, cinnamon, and pecans are at the top of that list.
This year, I’m excited to try something new. M&M’s® Pecan Pie are everything a chocolate + autumn lover could hope for. Rich chocolate with pecan overtones, somehow I feel less guilty eating a handful of them than I usually feel after eating a slice of pie. Or two. Never one to not feel guilty for long, I decided to try out a recipe with the delicious candies. The result? Pecan Pie Surprise Cake with Apple Cider Glaze.

no idea how easy this is to make great a baker I am. Everything was homemade. Ah, who am I kidding. I baked smarter, not harder. I used ready made biscuit dough, Pillsbury™ Creamy Supreme® frosting, and Mott’s® Apple Juice to make the cake, and I don’t care who knows it because it’s so darn good!

Making The Cake
When I say this cake is easy, that’s almost an understatement. You’ll need 2 packs of biscuits. Cut them in half and place three M&M’s® Pecan Pie in the center. Roll it up into a ball. Do that for all of the biscuit halves.
Combine 1 cup of sugar and 4 teaspoons of cinnamon. Put into a large plastic bag. Shake 3 – 5 of the biscuit balls in the sugar and then place them into a fluted pan that has been prepared with cooking spray.
Add 3/4 cups of brown sugar and 1/2 cup of butter to a microwave safe bowl and nuke it for 30 seconds. Stir the mixture and give it another 15 seconds or so in the microwave.
Put a layer of pecans on the bottom of the pan. Add half of the biscuit balls and cover with the brown sugar glaze. Add a few more pecans and then the next layer biscuits. Pour the remaining brown sugar glaze over the top and bake for 350° F.
Bake for 3o minutes. Let the cake cool for another 30 minutes and then flip onto a serving plate.
Making The Apple Cider Glaze
To make the apple cider glaze, put about 2 heaping spoonfuls of Pillsbury™ Creamy Supreme® Cream Cheese frosting, a splash of Mott’s® Apple Juice and a dash of cinnamon in a microwave safe bowl. I just used the same one I made the brown sugar glaze in. Microwave for 30 seconds or so until thin and stir to combine.
Drizzle the glaze over the Pecan Pie Surprise cake.
Enjoy with milk, coffee, Mott’s® Apple Juice or Snapple® Apple. If you’re over the fall flavors, it’s totally okay to stick with your summer drinks. You have my permission to drink lemonade with your Pecan Pie Surprise Cake. You’re welcome.
Make A Fall Candy Jar
Even though you’ll probably want to eat this entire cake all by yourself, you really shouldn’t. Trust me. Instead, why not invite a few friends over to celebrate fall? Since you’ll have plenty of M&M’s® Pecan Pie left (unless you ate them all while making the cake), you can make these easy fall candy jars. Easy. Simple. Are you noticing this theme here? 🙂
Here’s how you make it.
Get a few tiny mason jars and take the top off. Fill the jar withM&M’s® Pecan Pie.
Use a drill to put a small hole in the top and add a faux flower.
Sit back and grin as your friends discuss how awesome you are.
